Mulled Wine AKA Glögg {Vegan} {Gluten-Free}

I heard about Mulled Wine from the Swedish International House in San Diego's Balboa Park. Sweden House serves Glögg every year on Christmas, and this is continuously one of the best things about Christmas.

This was the first year that it even occurred to me that we could make this ourselves. We made it once at a Ski Cabin and once at a New Years batch. It was a hit both times.

Fried Polenta

This is my new favorite snack. I think it tastes like a very slightly healthier fritos. I use tube polenta (a unit often called a "chub"), and I hear that tube polenta is a gateway drug to making it myself out of cornmeal.

I bet they are right.

Tofu Macaroni and Cheese {Gluten-free} {Vegetarian}

Before I start, Let me say that this recipe takes more like tofu than it does cheese. Try this recipe at your own risk, because I may have put this on my blog not because I endorse it, but because the photos came out beautifully. I can't say that I wasn't just a TAD disappointed by how this came out.

Hot Summer Salad {Gluten-Free} {Vegetarian}

Is it cheating if we aren't cooking? It has been so very hot and the electricity company keeps providing disincentives to using the air conditioner. While we had a hankering for some tofu broccoli, we decided to keep the stove off and go for a quick mix no-cook salad instead.
